Healthy Banana Blueberry Muffins

During this time of increased isolation, it’s tempting to fall into unhealthy eating habits. Here is a recipe for muffins that are not only comforting, but are delicious and healthy. They can be made with regular flour or gluten-free.

3 large, ripe bananas

3/4 cup Swerve (or some other sweetener than doesn’t raise blood sugar or insulin levels)

1 egg, slightly beaten

1/3 cup melted coconut oil (or butter, if preferred)

1 cup fresh or defrosted frozen blueberries

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 teaspoon vanilla

1 1/2 cups flour (regular or gluten-free)

Mash bananas in a large bowl

Add Swerve and egg

Add oil and blueberries

Combine dry ingredients and stir in banana mixture

Pour into 12 well-greased or paper muffin cups

Bake at 375 degrees for 20-25 minutes
